Chinese Style Veg Fried Rice Recipe: Healthy Homemade

Greasy chinese food is my favorite. I need to have it at least once a month or once in a week to keep me going. But thinking about my health and weight, I have to restrain from it. We all know the huge quantities of MSG and food colorings added to chinese street food and even in restaurants. 

So I thought about cooking it at home by adding lots of fresh vegetables, with some healthy alternatives. Like, I switched my regular rice with brown rice, regular oil with olive oil, moderate spices and no MSG!

With all these changes, it still tasted pretty damn good. I am sharing my recipe of Veg Fried Rice Chinese Street Food Style with you. Hope you will like it. Let's start cookin!!

Serving 4 people

Ingredients

Oil 3 Tablespoon (You can add more oil, if you like a little greasy Chinese food, just make sure to use refined or healthy oil option)
Garlic 1 Tablespoon
Ginger 1/2 Tablespoon
Onion 1 (Chopped)
Cabbage 1 cup
Sweet Corns 1 cup
Beans 1 cup
Capsicum 1 small (Chopped)
Spring onion 1 

You can even add peas and carrots to it as well according to your taste. Just steam peas a little and chop carrots finely.

Basmati Rice/ Brown Rice  2 cups (Steam it after measuring)

Soya Sauce 4 Tablespoon
Vinegar 3 Tablespoon
Salt (according to taste)
Red chilly sauce 1 Tablespoon (Optional)




Method

1. Pour in oil. Heat it but don't let it come to the smoking point.
2. Add Ginger and Garlic finely chopped to it. Saute them until golden brown in color.


3. Now add onion.Saute it on medium heat until it becomes translucent in color. We want to have a little sweetness in the onion. 


4. Once your onions are done, toss in beans, sweet corn, peas and carrots to the pan. Saute them for about 5 minutes since we want to retain a little crunch. Keep the heat medium to high.

5. Now add capsicum and saute for about 5 minutes. Once done, add cabbage and saute it well for 1 minute. 


6. Now add 4 tablespoon vinegar. I am using Apple Cider Vinegar, you can use any vinegar that you have in house. 

7. Add 4 tablespoon soya sauce and mix the vegetables well. The color should be even. 

8. Add red chilly sauce. I am using Ching's Red chilly sauce which is slightly spicy with a little sweetness to it. Since we are not adding any chilly, this will add spiciness to the food. 

9. Add steamed basmati rice and mix all the ingredients well. The color should be even throughout. 

10. According to taste, add salt to the rice. I am adding 1 teaspoon of salt. It might vary according to tastes and preferences. 

11. Garnish it with spring onion. 


Your Chinese style veg fried rice is ready. Serve it hot with Manchurian or eat it as it is. It is perfect for times when you have left over steamed rice and want to try something appetizing with it.
